Mung bean soup is one of my all time favourite soups. It is scrumptious, soothing, easy to digest and perfectly warming for cold winter days. Mung bean soup is the perfect meal for the time when you are not very hungry, but just in the mood for a hot bowl of good soup. Also, it is the best recipe when you are down with cold, flu or fever.
Green un-husked mung beans (with their outer skins intact) are light and easy to digest. The spices and ghee aid in igniting the digestive fire and add tons of flavor.
Interestingly this recipe has its origin in the Charak Samhita, one of the oldest treatise of Ayurveda written in 3000 B.C.

Curried Butternut Squash Soup

I have no words to describe the winter in southwestern Ontario. This bone chilling cold winter causes a Vata aggravation in the surroundings and our bodies and needs to be combated with grounding, dense and nourishing squashes and other root vegetables.

My favorite way to combat the winter cold is by making this delicious curried butternut squash soup. Butternut squash is sweet in taste, and highly nourishing, builds Ojas which the essence of all of our dhatus or body tissues and is crucial for our vitality. The combination of ginger, garlic, onion and curry powder spice up this otherwise sweet dish and aid digestion. The addition of coconut cream enhance the Vata balancing effect.
