Mint & Couscous Salad

A healthy flavourful salad in less than 30 minutes, mint & couscous salad is highly customizable. feel free to modify the salad by adding or subtracting ingredients as per your choice.

Couscous is a tiny pasta made of mostly of wheat that is known for being "instant" or quick-cooking food. It is easily digested, strengthening, nourishing and Tridosha balancing.

Mint & couscous salad is a one dish meal, quick and easy to make and delicious at the same time. For this salad I used couscous, chickpeas, green olives stuffed with garlic, pickled cucumbers and cooked beets. I also added a handful of cherry tomatoes and some mint harvested from my backyard. Then mixed all the ingredients together and made a delicious salad any couscous lover will dream of.
